Braised Fish Head Tofu

Fish head, old tofu.

Wash the fish head and chop into pieces.

Heat oil in a pan, add ginger slices, sauté until fragrant, fry the fish head, add a spoonful of salt, let the fish head taste.

Flip and fry until browned on both sides.

Cut the tofu into small pieces, put them in the pan and fry for a while, add salt at the same time, the tofu will be easy to taste.

Pour two tablespoons of light soy sauce, one spoon of cooking wine, add water to submerge the ingredients, bring to a boil on high heat, then turn to low heat to simmer.

When the soup is almost dry, add chicken essence and sprinkle with chopped green onion at the end.
Tips:
Generally speaking, soy sauce is used for braised soy, but when the old soy sauce is used up at home, I have to use light soy sauce instead. Because light soy sauce is a bit sweet, there is no need to add sugar. The taste is very good.
