Stewed Tofu with Fathead Fish in Sauce

Remove the scales and internal organs of the fat head fish, wash and chop into large sections

Slice green onion, slice ginger

Tofu cut into pieces

Add fat head fish to green onions and ginger, marinate with appropriate amount of salt and cooking wine for 20 minutes

Add oil to the pot and heat up, add the fish pieces in batches and fry them until the surface is golden brown and remove them for later use

Leave a proper amount of base oil in the pot, first add in Pixian bean paste and fry out the red oil, then pour in the soybean paste and fry for the fragrance

Add green onion, ginger, cooking wine and stir well

Pour in hot water and boil

Put the fried fish pieces in the pot and boil
10.
Add cooking wine, aniseed, pepper, tofu cubes and cook for 10 minutes, add salt and sugar to taste, and simmer for a good taste.
Tips:
1. Don't use too much salt. Pixian Doubanjiang and Soybean Paste have saltiness.
2. Tofu is resistant to cooking, so it's delicious if you put it in early.
