Braised Paddle

Wash the tail of the cod, cut twice into the fish body, add salt and cooking wine and marinate for 10 minutes.

The surface of the marinated fish is stained with starch.

Coat with egg wash.

Drop into a 70% hot oil pan.
5.
Fry until the skin is golden and fish out.
6.
Leave the bottom oil in the pot and saute the onion, ginger, and garlic.
7.
Add the diced lean meat and stir-fry until raw.
8.
Add soy sauce, vinegar, sugar, salt and water to a boil.
9.
Add the fish, turn to a low heat and cook until the soup is concentrated.
Tips:
The egg liquid and starch are used to keep the fish from falling apart when frying.
