The water temperature of the blanched cassava flour is the key. It is recommended to halve the amount for the first time. Try a few more times. "

Ingredients

Brown Sugar Pearl Milk (dirty and Dirty Milk Devil's Fresh Milk)

1. Weigh out 20 grams of brown sugar and 60 grams of water in a pot, and try to break up the large pieces of sugar (I used Taikoo for brown sugar, and brown sugar if there is brown sugar).

2. Weigh out 60 grams of tapioca starch.

3. Heat the brown sugar in the water on a small fire, be sure to melt all the sugar, and then boil on a high fire, be sure to burn until there are big bubbles, and there are not many small bubbles. Then turn off the heat and quickly pour the tapioca starch into the pot and stir.

4. Knead the dough while it is hot (if the dough does not form, the water temperature is too low, and the dough is too sticky, or the water temperature is too high).

5. Put an appropriate amount of tapioca starch in the basin, roll the dough into small balls, and coat them with a layer of flour to prevent sticking.

6. After kneading all the small dumplings, use a sieve to remove excess starch on the surface.

7. Bring the water to the boil (be sure to boil), put the pearls in the pot, cook for 8-10 minutes on medium heat, turn off the heat and cover for 10 minutes.

8. After the pearls are boring, remove them and rinse them with cold or ice water, and put them in the refrigerator for a while (refrigeration, refrigeration, refrigeration, not freezing!!!)

9. Weigh out 40 grams of brown sugar and 50 grams of water in a pot and heat until the brown sugar is completely melted.

10. Pour the refrigerated pearls into the brown sugar water and continue to boil it over a medium-to-low heat, stirring constantly to prevent the bottom from sticking until the brown syrup drips like honey and rebounds, then turn off the heat.

11. Put the pearls in the cup and rub the dirty feeling on the wall of the cup (I don't have a good-looking cup, so I replaced it with the milk tea cup outside).

12. According to your taste, add an appropriate amount of pure milk.

13. Done~

14. Tips: 1 For the first time, I really recommend a small amount and try more. 2 If you think brown sugar is not too sweet, you can add white sugar in the step of making brown sugar syrup. 3 Milk can be refrigerated in advance. 4 Pearls can be made more and divided into small packets in the refrigerator. Freeze and cook when you want to eat.
