Caramel Pearl Milk Tea
1.
Prepare cassava flour and sugar cubes. If you have brown sugar, you dare to use brown sugar. Because I don't have it, I use brown sugar instead.
2.
Pour 50g of sugar and 80g of water into a pot and simmer to melt the sugar cubes.
3.
After melting the sugar cubes, pour the tapioca flour into the boiling sugar water and stir quickly to form a dough.
4.
Then roll the dough into small circles.
5.
Boil a pot of clean water, pour the pearls into the lid and cook until the pearls are translucent, pick up and cool in ice water.
6.
Finally, boil 100g of sugar and 350g of water until it becomes viscous. Take the pearls out of the ice water and put them in a pot to boil together.
7.
After smelling the slight caramel flavor, the sugar rises, and the pearl is finished.
8.
Make a small cup of black tea, add half a cup of milk, and add a spoonful of pearls to complete the hygienic and authentic caramel pearl milk tea.
