Add 50g of cornstarch to the oysters and grab them with your hands. At this time, you will see the black water coming out. Then you can add in water to rinse off and drain the water for later use.

This is the oyster that has been washed, so it should be cut into small pieces for convenience.

The homemade sweet potato flour was added to 50ml of water and stirred. I was afraid of small particles, so I filtered it again.

Put the oysters on a dish, beat in 3 eggs and chopped green onion. (You can also put coriander or lettuce)

Then add a pinch of salt and 1 tablespoon of soy sauce and stir well with chopsticks.

Then pour in the evenly mixed sweet potato water and continue to stir evenly.

Pour peanut oil in a hot pan (the oyster is more oily, so there is more oil) and fry until golden brown on both sides, and the oysters are well cooked, then use a spatula to cut into small pieces.

The cooked oyster can be paired with sweet and spicy sauce. I usually don't add it. For me, the taste is okay.

Tips:
1. For oyster bake, it is enough to buy small oysters. You can fry them all together, or cut them into small pieces like I did.
2. Sweet potato flour is used to make oyster bake at my house. Now there are oyster bake powder sold outside. I haven't tried it. What is the difference if I try it next time. Sweet potato noodles are newly made in-house, and the oysters with sweet potato noodles are especially tender.
3. I didn't make a sauce for my oyster brand. It depends on your usual preference.
4. Add sweet potato flour to water, the ratio is 1:1. Because sweet potato flour has some particles, it needs to be melted with water.
5. Oyster bake is generally whole, so you can order it at home.
6. The oysters cooked in different places are different, like Taiwan's oyster fried with lettuce. There are also places where coriander or chopped green onion is added.
