Chicken Shank Italian Style Golden Noodles (one of The Series)
1.
Oily dried tomatoes, marjoram (origanum), Italian golden noodles.
2.
The front and back of the chicken shank (chicken wing root) are marked with two diagonal lines.
3.
Marinated chicken shank (chicken wing root)> Coarse salt, black pepper, white wine (outside the spare portion) in order, stir slightly, then add minced garlic (half of the spare portion), lemon thyme (use scissors to cut into sections) Stir for another 15 minutes (the first time), and for the second time, stir the chicken shanks from the bottom of the container until the taste is even, and then let it stand for 15 minutes (the second time) to taste.
4.
After marinating, try to place the chicken shanks diagonally downwards and place them in a spare pot (no oil is used). (Leave the marinated juice, save it for later)
5.
Fry over medium heat until browned.
6.
Turn it over and fry until browned.
7.
After the chicken shanks are fried on both sides until browned, turn to low heat, cover the pot, simmer until halfway, pour in the remaining marinated juice, and simmer until they are delicious and cooked.
8.
The chicken shanks are braised and fried for a good taste, and when they are cooked through, put them in the pot for later use. (If you don’t want lemon thyme, just pick it out.)
9.
Prepare a cold pan and add dried tomatoes in oil.
10.
Stir the dried tomatoes over a low heat, then use a spatula to gently poke the dried tomatoes apart.
11.
After the tomatoes are dried, add the minced garlic (half of the remaining portion) and the dried chilies that are cut into diagonal slices, and then stir to dry evenly.
12.
Step (11) After drying, pour 50-60cc of white wine (add or subtract yourself) or noodle soup (10 tablespoons).
13.
Add water to the boiling pot with a slotted spoon. The water in the pot is boiling. Use your hands to gently pinch the noodles, and slowly put them near the middle of the pot. Use chopsticks to stir slightly along the shape of the pot. (The cooking time of noodles is best if it can match the time with the ingredients in the wok. If you can't match the time, turn off the wok first, wait until the noodles are cooked and put them in the wok, then turn on the fire.)
14.
After boiling, you can turn off the heat. (After the homemade noodles boil, you can just pick it up. It can be boiled again. Don't cook too badly. The taste is bad.)
15.
Pick up the inner colander pot, tilt it slightly forward at a 45-degree angle, and place it on top of the outer pot to drain. (This time the noodle cooking pot uses a special pot for cooking pasta, other cooking pots can be used.)
16.
After draining, pour it into the pot of step (12).
17.
Sprinkle with salt, then use a spatula over medium-to-low heat to stir evenly. (Just do not sprinkle salt here. Sprinkle salt before eating.)
18.
After stirring evenly, pour in step (8). (If the noodles are too dry, add a little white wine or noodle soup.)
19.
Then stir evenly over medium-low heat to taste.
20.
Sprinkle or arrange with marjoram leaves, ready for meal. (If you don’t think it tastes enough, sprinkle with salt, black pepper, and if there is cheese powder, sprinkle on it before eating.)
