Cinnamon Apple Pie

First make the pie crust: sift the low-gluten flour, powdered sugar and salt, and put it into the container. Cut the butter into small cubes to soften it.
Pour the diced butter into the flour container. Rub it into crumbs with your hands.
Pour the egg mixture. Knead it into a ball with your hands, don't knead it too much, just make it into a ball.
Then wrap it in plastic wrap and put it in the refrigerator for 1 hour for later use.

Next, let's make the pie: pour all the animal whipped cream, fine sugar, and egg liquid into the container.
Mix well until the fine sugar melts.
Sift in cornstarch. Stir until there are no particles.
After sieving, cover with plastic wrap and set aside.

Sprinkle a little low-gluten flour on the table mat to prevent sticking. Place the refrigerated dough on the chopping board and roll it out into a dough sheet that is a circle larger than the row pan.
Spread the dough into the pie pan.
After compaction, roll the pie with a rolling pin to remove the excess part. Then use a fork to poke small holes in the bottom of the pie crust to prevent drumming during baking.
Spread oiled paper and press on small stones. Place the spread pie crust in a preheated oven at 170 degrees and bake for 10 minutes to set the shape.

Spread 50 grams of peeled diced apples evenly.
Bake in a preheated oven at 180 degrees for 10 minutes. (At this time, you can handle the apple slices. Wash the apples and then cut them into thin slices. This step should not be too early, because the apple slices will oxidize over time. In addition, prepare 20 grams of diced apples and mix them with honey.)
Take out the pie, the pie filling has solidified a little at this time.

Stack the apple slices neatly.
Put the apple diced in the honey in the middle of the pie and brush with a thin layer of honey water.
Continue to bake at 180 degrees in the oven for about 30 minutes. (The temperature and time are for reference only, please adjust according to the actual situation of your own oven)
After 30 minutes, take out the apple pie, brush the surface with a layer of honey and sift with cinnamon powder, and then continue to bake it in the oven for about 10 minutes.

Tips:
1. Because the pie plate is relatively large, it is recommended to buy larger apples, so that the slices cut out are long enough, and a circle will look better. If the apples are small, you can try to circle twice, which is a different style.
2. I peeled the diced apples in the filling and the diced apples in the middle of the pie, but the apples in the circle were not peeled.
