Coconut Pomelo Peel Candy

Rub the skin of grapefruit with salt and peel off the skin after washing.

Remove the white part and leave the outermost skin.

Cut into small strips and soak in warm salt water for an hour, then change the water to soak for 5 hours, and change the water in the meantime. You can also soak overnight.

Pour an appropriate amount of water into the pot and boil the rock sugar.

Pour in the grapefruit peel and add a few drops of lemon juice (if you don't need to add it) and simmer until the water is dry.

Use a little starch and water to adjust, not too thin.

Add the minced coconut to the starch and stir well.

Mix well with the boiled grapefruit peel.

Spread evenly on the baking tray and bake at 100 degrees for 50 minutes. If you don’t have an oven, use a microwave to bake on a low fire. Mainly to remove water.

Tips:
This time the grapefruit peel was not blanched, so I felt that the bitterness of the water would be more blanched first. If you have heating in the northern home, you can put it on the first day to let its water evaporate naturally. Use the oven if it is not dry enough.
