Cold Bean Chops

The bean chops were soaked for about half an hour in advance.

Slice or shred the bean chops, add water to a boil in a boiling pot, and blanch the bean chops.

After blanching the water, put it on a plate and let it cool.

Put the minced green onion, ginger and garlic into a bowl and set aside.

Put a spoonful of oil in the pot and heat it up.

Drizzle hot oil on the onion, ginger, garlic and sauté. Add salt, sugar, chicken powder, soy sauce, aged vinegar, chili oil, Chinese pepper oil in a bowl,

Arrange the cold beans in a seasoning bowl and mix well.
Tips:
The onion, ginger and garlic must be drizzled with hot oil, the taste is much worse than the raw one. I am from Chongqing, so I like spicy, chili oil and pepper oil will naturally put more, this can be added according to your own taste. But it is recommended to put more vinegar and sugar, sour and sweet are better.
