Colorful Sushi

Cucumber peeled and cut into strips

Carrots peeled and cut into strips

Boil the eggs in boiling water (lazy practice, no oil pan), preferably spread into egg skins

Add the rice to the sushi vinegar, mix well and let cool (the rice is cooked with purple sweet potatoes so it turns pink)

Tips:
Ketchup is also delicious when replaced with salad dressing. If there is no salad dressing at home, I use tomato sauce instead.
