Curry Risotto

1. Cut the pork pieces into even sizes and put them in a conditioning bowl.

2. Soy sauce is added to the pork.

3. Then add Japanese curry.

4. You can adjust the amount of curry powder added to your liking (Japanese curry is sweeter).

5. Add a tablespoon of sugar.

6. Begin to massage the meat and mix the seasonings and meat thoroughly.

7. Massage until the sugar granules melt.

8. Add Indian yellow curry powder.

9. After mixing well, put it in the refrigerator for 1 hour (not frozen).

10. Put 3 tablespoons of Indian curry powder in a dry pan.

11. Stir-fry on low heat until aroma comes out.

12. Add low-gluten flour.

13. Stir the flour and curry for 35 minutes.

14. In another pot, heat the oil in the pot to 180°C, and pour in the marinated meat.

15. Keep turning the pieces of meat.

16. The golden yellow surface is immediately removed.

17. Remove the strainer oil.

18. Heat the oil in the pot to 190°C and pour the potatoes.

19. Flip the potatoes and stir quickly.

20. Just deep-fry golden brown.

21. Pick up and set aside.

22. Cut the onion into fine pieces.

23. Leave the oil in the pan, add the onion and fry until it reaches.

24. Stir-fry until softened, it takes about 40 minutes, depending on the amount of onion.

25. The onion is completely puree, pour in water.

26. Add evaporated milk, coconut powder, sugar, and Indian curry powder in a mixing bowl and beat with a whisk to form curry water.

27. Add salt to the onion water in the pot.

28. Add peanut butter.

29. Add tomato sauce.

30. Pour in half of the curry water you just made.

31. Pour in the potatoes just fried.

32. Pour the carrots.

33. Add the other half of the curry powder water again.

34. Stir constantly with a spatula.

35. Adjust the heat to a high boil, continue to stir and cook for another 5 minutes.

36. Pour in spare pork cubes.

37. After pouring the pork cubes, turn to low heat.

38. The simmering time does not need to be long, because the pork meat itself has been seasoned with curry.

39. Pour this pot of curry directly on the cooked rice, add a little kimchi, broccoli, and a little cilantro for garnish.
