Eggplant Box with Mashed Potatoes

Wash and slice potatoes. Put it in a perforated steaming tray, and the Fangtai steamer selects the normal steaming mode, 100°C, for 30 minutes.

Put the steamed potatoes in a bowl, sprinkle with black pepper, and press with a grinder to form a delicate mashed potato.

Beat the eggs, add salt, stir well and set aside.

Cut the eggplant into 1cm thick pieces. Make a cross cut in the middle, don't cut it.

Fill the eggplant box with an appropriate amount of mashed potatoes.

Dip an appropriate amount of flour on the surface of the eggplant box.

Then wrap it with egg liquid.

Heat the pan with little oil, put it in the eggplant box, and fry on low heat for about 2 minutes. Flip and fry for about 2 minutes, until golden on both sides, ready to be out of the pan.
