Eggplant Peel

A moderate amount of eggplant skin.

Boil water in a pot and add some salt.
3.
Peel the eggplant.
4.
Cook the eggplant skins.
5.
Take out the cold water.
6.
Drain the water and put it in a container.

Add minced garlic, chopped green onion, chopped parsley, and chili powder in a small bowl.
8.
Fill the pot with oil and cook until blue smoke appears.
9.
Pour the hot oil into a small bowl and mix well.
10.
Add sugar, vinegar, light soy sauce, and salt and mix well.
11.
Pour the sauce on the eggplant skin.
12.
Just mix well.
