Eggplant Strips

Cut the eggplant into long strips, wash and set aside

Prepare minced garlic, chopped green onion, and bean paste. Prepare a small bowl and add 2 teaspoons of sugar, 1 teaspoon of dark soy sauce, 1 teaspoon and a half balsamic vinegar, 1/3 teaspoon of chicken powder, add a little water and mix thoroughly.

Pour an appropriate amount of oil into the pan and cook until 70% of the heat. Fry the eggplant and remove the oil to control the oil for later use.

Add eggplant and stir fry evenly

Pour in the sauce and bring to a boil

Use a little cornstarch to make water and sprinkle with chopped green onion.
