Food in One Pot: Braised Noodles with Small Mackerel Fish

First, remove the head, tail, and internal organs of the young Spanish mackerel, rinse with clean water, and cut off the fish bones on the back.

Cut the prepared small mackerel to control the moisture and cut into small pieces.

Wash the shiitake mushrooms and onions, control the moisture, and cut into shreds.

Pour an appropriate amount of base oil into the pot, add the chopped onion, garlic cloves, dried chili, pork belly, star anise, and cinnamon to fry until fragrant. Add a little white wine to remove the smell.

Pour in the soy sauce, dark soy sauce, shiitake mushrooms, and fragrant leaves and stir-fry evenly; pour in the processed mackerel cubes, add water, and the amount of water is less than the fish cubes. Bring to a boil.

After the water is boiled, add a small spoonful of sugar and salt to taste. Spread the noodles flat on top, spread them evenly with chopsticks. Bring to a high heat and turn to a low heat to simmer for 10 minutes.

Add a little coriander to enhance the flavor and stir well before eating.
