Fried Crab with Ginger and Spring Onion

Brush the crab to clean the tail cap, internal organs, and gills, cut into pieces (four in one opening), and pat the crab claws with the back of a knife.

Cut the ginger into slices, cut the red pepper into circles, and cut the chives into sections.

Add oil, sliced ginger, and white onion in a hot pan to create a fragrant flavor. Pour in the crab and a little cooking wine and stir-fry for a few times. Add a little water along the side of the pan and continue to stir-fry.

Pour the red pepper rings in about 5 minutes, stir-fry the green onions evenly, add salt, steamed fish soy sauce to taste, and turn off the heat.

Plate.

The whole process of cooking requires fierce stir-fry.
