Fried Dried Small River Prawns with Carrots

Peel and wash the carrots.

Dice carrots.

Mince garlic and shred ginger.
4.
Wash and chop the shallots.
5.
Dried small river prawns are rinsed and drained.

Heat oil in a pot, add minced garlic and shredded ginger and stir fragrant.

Add the diced carrots and stir fry for two minutes.

Add the river prawns and stir fry a few times.
9.
Add a spoonful of Wei Ji Xian and stir fry for a minute.

Pour a little water along the side of the pot and simmer for a minute.

Season with salt.
