Fried Pork Skin
1.
Clean the raw pigskin and put it in a pot of clean water. After it is boiled on high heat, change to low heat to make the pigskin thick and discolored.
2.
Take out the boiled pork skin, let it cool, and scrape off the grease in the skin with a knife.
3.
Cut the clean greased pigskin into 5 cm wide strips with a knife, thread it up and hang it in a ventilated and cool place to dry.
4.
Generally, the pig skin can be dried after cooling for about 7 days.
5.
Dry the pigskin to the extent that it can be broken by hand.
6.
Pour vegetable oil into the pot, add dried pork skin when the oil is 70% hot, and fry the skin over low heat to make the pig skin fluffy and yellow.
7.
Remove the fried pork skin from the oil-controlling oil and set aside.
8.
Put the fried pork skin into a pot of boiling water and soak it for about 6 hours. The skin will become soft, swollen and elastic.
9.
Soaked deep-fried pork skin can be cooled, cooked in soup, or cooked with other vegetables.
Tips:
1. After boiled in water, the raw pig skin can be easily scraped off the oil in the inner layer.
2. The hot oil in the pot is easy to splash when the dried pigskin is fried, so pay attention to safety.
3. After the fried pork skin is boiled in clean water, soak for about 6 hours to be fluffy and elastic.
