Fried Snails with Spicy Sauce

The snails should be kept for 1-2 days after they are bought, so that the snails can spit out the sand and dirt, and the water should be changed frequently during the period.

Cut off the tail of the snail before cooking

Prepare tempeh spicy sauce, chili, chopped green onion, shredded ginger, garlic slices

After the oil is hot, add ginger, garlic slices, chili and chopped green onion (1/3) and sauté

Then add the spicy sauce and fry for a while

Pour the processed snails and stir fry for a while

Pour in the white wine and stir fry for a while

Then add salt, light soy sauce, dark soy sauce and stir fry for a while

Add sugar and stir well
10.
Pour in half a bowl of water, cover and cook for 4 minutes

Put the remaining chopped green onion in the pan and stir well before starting the pan.
Tips:
1. When the snails are soaked, if they float on the water, they are dead and should be thrown away
2. Don't collect the snail soup that is too dry, keep one-third of it, so that it will be more flavorful when you eat it.
3. Don't burn the snails for too long, otherwise the meat will get old
