Boil the brown sugar and let it cool, then put the salt, olive oil, rye bread flour, high-gluten flour, and yeast into the bread machine in turn.

Knead to the expansion stage.

Add cranberries and walnuts and knead well.

The kneaded dough undergoes basic fermentation in the bread machine (covered with plastic wrap or wet towel).

The dough rises to 2 to 2.5 times its original size.

Take out the fermented dough and ventilate, divide it into 4 even parts, and cover with plastic wrap to relax for 15 minutes after rounding.

Roll the loosened dough into an oval shape, turn it over and thin the bottom edge, then fold the top two corners in the middle to form a triangle, roll it down from the top, pinch it down, and arrange it into an olive shape.

Put it in the baking tray for second fermentation.

After the fermentation is complete, sieve a layer of high-gluten flour (out of the amount) on the surface of the dough. Then use a sharp knife to cut 4 knives obliquely, put it into the middle layer of the preheated 180 degree oven, and bake up and down for 22 minutes.

Tips:
1. Don't add water all at once, reserve a little, and add it slowly according to the water absorption of flour.
2. Please adjust the oven temperature and baking time with your own oven, and cover with tin foil after baking.
