Henan Braised Noodles

Add a little alkaline surface and a little salt to the flour, add 100 grams of water and make a dough.

After the dough is mixed for 15 minutes, knead it into a smooth dough.

Prepare vegetables, green garlic, star anise, bay leaves, and red dates.

The dough is divided into equal parts, squashed, and rinsed with an appropriate amount of cooking oil to prevent sticking and water loss.

Prepare the lamb, my lamb is semi-finished. It can be scalded with boiling water.

Add the mutton to a boil in cold water, defoam, add the ingredients and simmer, turn to a low heat and simmer until the soup is milky white, and simmer on low heat for about 1 hour.

Take the noodle soup and press it with chopsticks in the middle.

Hold both ends of the noodle and gently stretch it.

Pull away from the indentation.

Tips:
1. Add salt to the flour to make the dough gluten.
