Homemade Capers (the Easiest Three Days in History)

Washing rice water (there is nothing special about rice washing water, just wash rice water...Hahaha isn't this nonsense?) It must be rice washing water, not clean water~ The fermentation process depends entirely on rice washing water.

Wash the fresh green beans.
(My mother is more greedy and likes to buy a lot. She said that this time it's still small... Our family has a large number of people and will give it to other relatives and friends, so everyone can eat as much as they can, don’t waste it~)

Remove the sharp bean heads.

Beans are very long and can be cut into three pieces and stuffed into a container. (As long as you can stuff it without cutting it, you just stuff it all in anyway)

Add 5 tablespoons of salt to the left picture (full 5 teaspoons! Don’t save it for preservative effect), and 5 tablespoons of sugar (soup spoon) on the right picture~ (if you have a small container and the amount of foam is small, reduce the sugar and salt appropriately) Lid Cover it and place an iron pan underground to prevent the rice washing water from overflowing during the fermentation process. Keep in a cool place. Fermentation is good in 3 to 4 days in summer, and 4 to 6 days in winter.
Note: Because some kitchen friends have reacted that individual beans will smell bad after brewing? ? I have not soaked for countless times. There may be two reasons. 1. There is less salt. Don't add a little salt. Salt plays a role in antiseptic! Although I said that your capacity can be reduced appropriately if you are small, don't pick it! This is not cooking! This is brewing! 2. If the beans are soaked for too long, the beans will be evenly colored and waxy yellow, and you can start eating!

In fact, it can be eaten in four days, because the weather here is still hot and can’t enter the winter 😂 Open it will smell a sour soda with white foam on the surface~ this is normal ! It's not broken! ! ! Focus here! ! Generally, the amount we soak can be fried three times~

Take out an appropriate amount to eat, wash it, and it looks completely yellow. Don’t soak it for too long. The more soaking it gets, the more sour it will become. Sometimes it’s too sour after eating it for more than a few days.

Precautions
1. The specific time here is not all the same for three days! This is determined by the climate! You have to observe the color of the beans yourself! The color becomes uniform and waxy yellow.
! ! ! Remind again! ! ! The brewing process requires 5 teaspoons of salt and 5 tablespoons of sugar! If you make a small bottle, take 3 spoons! Don't pick! I think there is too much unhealthy stuff...This is an antiseptic effect during the brewing process! You have to add half a teaspoon of salt to every dish, not to mention such a big jar of water!
