Homemade Plum Wine
1.
The ratio of wine: plum: sugar can be adjusted according to personal taste, generally 3:2:1 is more common, but I used 1:1:1 this time.
2.
Rub the plums from the plums with coarse salt one by one.
3.
After washing it with water, soak in water for about 2 hours to remove the astringency of the green plum.
4.
Wipe off the water on the surface with kitchen paper grain by grain, and pick out the stalk of the green plum.
5.
Air-dry the plums for about 2 hours.
6.
After washing the glass bottle soaked with green plum, thoroughly disinfect it with boiling water. Wipe dry, then air-dry the glass bottle, set aside.
7.
Pour the green plum and rock sugar into the glass bottle. Finally put the wine.
8.
Store it in a cool place where it will not be exposed to the sun, and wait for the plum wine to ferment. In the first month, move the bottle every few days. After the rock sugar is completely melted, store it completely still. It takes about 3 months to 1 year to harvest.
Tips:
The glass bottle used for soaking plums and the green plums must not contain water, and green plums will become moldy due to residual moisture.
The stalk of the green plum has a bitter taste and is prone to mold. Pick it out.
