Homemade Sour Plum

The green plum is soaked in salt water, washed, and then soaked in salt water for 1 month. This process is to complete the process. Basically, it looks like 1 catty of green plum and 2 taels of salt.

After removing the green plum, carefully clean it with pure water to wash away the salt on the surface. After draining, spread it flat on a bamboo plaque to dry. It is semi-dry and almost moisture-free.

Prepare licorice, brown sugar, honey, and maltose. Prepare another casserole. Add appropriate amount of water to the casserole, add licorice, and cook for about one and a half hours. If it takes longer to cook, the licorice flavor will be stronger.

When the syrup cools to 50-60°, add an appropriate amount of honey and mix well, then put the dried plums in and soak for about 12 hours.

Remove the plum, drain or soak up the surface syrup with a kitchen paper towel, and then dry.

It is finished after drying again. Put the prepared licorice and plum in an airtight box for storage.
