Honey Grapefruit Tea

First wash the grapefruit with water, then apply a layer of salt on the grapefruit skin, and rub it repeatedly to cover the entire skin to clean the grapefruit skin.

Brush the salt on the skin and peel off the grapefruit skin. Although the skin is bitter, this is the essence of grapefruit expectorant and antitussive.

Peel the grapefruit flesh and tear it into small pieces; cut the peeled yellow skin into filaments about 3 cm long and ¹mm thick, the thinner the better; the cut grapefruit peel is marinated in brine for 1 hour. (Note: Use a knife to peel the skin as thin as possible.)

Put the marinated grapefruit peel in clean water and cook for 10 minutes on medium heat to soften and remove the bitter taste.

Put the processed grapefruit peel and pulp into a clean oil-free pot, add a small bowl of water and rock sugar, and boil for 1 hour on medium and low heat until it is thick and the grapefruit peel is golden and translucent. Stir frequently to avoid sticking to the pan.

After letting cool, add pure honey, stir evenly to make honey grapefruit tea, put it in an airtight jar and store it in the refrigerator, rinse with warm water when drinking.
Tips:
1. The grapefruit peel must be washed several times with salt, otherwise the bitterness will be very heavy.
2. To choose pure honey for honey, it is best to use lighter honey (Vitex honey, Hundred-flower honey), which can highlight the fruity fragrance of grapefruit. (I use honey from my own bee farm)
3. Don't leave people by the fire when cooking, for fear of getting confused. Especially when it is getting better, keep stirring constantly. Test patience, this step is critical.
