Iced Bayberry Juice

Soak the fresh bayberry in brine for 15 minutes and drain. This step is to clean the bayberry and let the bugs run out. Note that the time should not be too long, the bayberry will fade and the juice will run away.

Put the bayberry in a clean pot, pour mineral water, and the bayberry. Put in a handful of rock candy. After boiling on high heat, change to low heat for 20 minutes. Use mineral water because it has no impurities and tastes better than tap water. You can also try using purified water if you have a water purifier at home. You need a lot of rock candy, but it depends on your personal taste. If you put less rock candy, you can add it afterwards. If the sweetness is not enough, it will be sour.

Cooked bayberry juice. If you like to eat fruit, you can chop off the meat, and if you don’t like it, you can just do it.

Put it in a cold kettle and chill in the refrigerator. Note that iced is very important, and hot bayberry juice is not delicious.
