Kumquat Jam

Wet the kumquat, add salt, and rub it with flour to clean it.

Cut a kumquat into three pieces and dig out the seeds.

The cut kumquats are marinated with rock sugar for eight hours.

Pour the marinated kumquats into a casserole and bring to a boil over medium heat.

Boil until moisture is released and there are a lot of foam on the surface. Turn to low heat, ignore the surface foam and continue to cook.
6.
Squeeze in the lemon juice when it cooks for 20 minutes.
7.
Cook until 103 is enough.
Tips:
The whole process of making jam must be stirred continuously. Avoid using iron pans for pots and utensils, and the marinating time cannot exceed 24 hours.
