The little yellow croaker is small and has only one big bone spur, which is really suitable for this practice.
I made this dish today—"small yellow croaker in black bean sauce". I added tempeh to the soup.
Because I really like the aroma of tempeh, I always feel that it will bring some exotic feeling to the dishes.
This dish is cold and appetizing, sweet and sour, yet delicious. It is very suitable as a cold dish at the banquet (I dare not say, I always eat it as a snack...)! "

1. Prepare small yellow croaker, 1 old ginger, 1 green onion;

2. After thawing the small yellow croaker, remove the head and internal organs, and then cut off the fins. After cleaning, drain the surface water and place it in a bowl;

3. Cut 1 old ginger into thick slices, 1 scallion, cut into pieces, and put in a bowl;

4. Add rice wine 1 and salt in turn, mix well, wrap in a fresh-keeping bag, and refrigerate for 2 hours or overnight;

5. Prepare other spices;

6. Chopped tempeh;

7. Peel and mince ginger, mince green onions, and mince garlic after peeling;

8. Warm oil in a pan, add various chopped powders, stir-fry on medium heat until fragrant;

9. Turn to high heat and cook rice wine 2 along the side of the pot;

10. After frying the aroma, add water;

12. Add light soy sauce;

13. Join the soy sauce;

14. Add rice vinegar;

15. Bring to a boil on high heat, then cook for a minute;

19. Pour cornstarch into the dish, and evenly glue the small yellow croaker with a layer of dry powder;

22. Pick out the small yellow croaker and drain the oil slightly;

24. After all the operations are done, cool to room temperature, then put it in the refrigerator for more than 4 hours or overnight, ready to eat. Take out the small yellow croaker while eating, drizzle with some soup, sprinkle with chopped red pepper and green onion, drizzle with a little sesame oil, eat it~

Tips:

1. The small yellow croaker should be cleaned. It is better to cut off the fins. Otherwise, the fins will be scorched easily when fried later;

2. When stir-frying all kinds of mince, do not use high heat, so as not to stir-fry;

3. Before the small yellow croaker is fried in the pan, be sure to dry the surface moisture. If you are in a hurry, use kitchen paper to absorb it. Otherwise, the oil will splash when it is not fried in the pan, and it will be easy to get injured.

4. The dry powder wrapped around the small yellow croaker is not too thick, just a thin layer;

5. After the small yellow croaker gets out of the pot, don't turn it at first, wait for a few 10 seconds, shake the pot, and turn it over when the small yellow croaker can move by itself, so that it will not break easily;

6. If you like the crispy taste, you can turn the fire to deep fry the small fish.
