Mango Jelly Yogurt Cup
1.
Yogurt ingredients: 400 grams of milk, 100 grams of yogurt, appropriate amount of sugar
2.
Pour the milk and sugar into the milk pot and boil on low heat
3.
When the milk has cooled to 30-40 degrees, pour in the yogurt, mix well, and seal the lid
4.
Put it in the oven to ferment, because my oven has a relatively high fermentation temperature, so the door is half open, and the yogurt will solidify after 3 hours
5.
When the yogurt is ready, make a mango jelly. Take 200 grams of mango flesh to make a puree, 20 grams of water, 5 grams of agar, and 20-30 grams of sugar.
6.
Pour the agar into water and soak it softly, cook on low heat until the agar is completely melted
7.
Pour the mango puree and sugar into the agar water and stir well
8.
Sift the mango puree and set aside
9.
Prepare the container, fermented yogurt, mango jelly, mango jam, and start to assemble
10.
Scoop a layer of yogurt and a layer of mango jelly into the cup until it is full
11.
Finally, top with appropriate amount of mango sauce, cover with plastic wrap and refrigerate for two hours before eating
Tips:
1: For yogurt, try to choose plain yogurt that does not contain thickeners, and see if there are gelatin, carrageenan, and agar in the ingredient list as thickening additives;
2: Milk must be cooled to about 30 degrees before adding yogurt. If the temperature is too high, the probiotics in the yogurt will be scalded to death and cannot be fermented;
3: The fermentation temperature should also be ensured to be between 30 degrees and 40 degrees. It is not necessary to use an oven, just find a warmer place;
4: Remember to disinfect the container for yogurt fermentation
