Milk rolls are a well-known snack in old Beijing. The white milk rolls are obtained by separating the whey with milk. Similar to cheese, the nutrients are concentrated, so the nutritional value is high. It tastes great when paired with sweet bean paste."

Ingredients

Milk Roll

1. Pour the milk into the pot and boil

2. Use a net to filter out the rice in the rice wine, leaving only the wine, and pour the filtered rice wine into the milk

3. The milk will cake quickly, turn off the heat at this time.

4. Spread a thinner cloth on the net. Two layers of sand cloth are the best. I don’t have one, so I used the cloth for tofu to filter out the milk. The filtered whey can be drunk directly, and the taste is also very good, so use a clean container to pick it up

5. It should be relatively hot. After I used whey to filter it almost, I used the method of pressing tofu, pressing the heavy object for an hour to filter the remaining whey as much as possible.

6. Finally, put the obtained cheese in a fresh-keeping bag and knead it well to make the cheese tough and delicate

7. Then press the cheese into rectangular slices about 5 mm thick, and top with homemade red bean paste

8. Roll up from one end and cut into sections

Tips:

The milk must be full-fat milk, so that you will get a little more cheese. The filtered whey can be drunk directly, don't throw it away, it still has a lot of nutrients.
