Moon Cake

Soak the raisins, goji berries, and dried strawberries with rum and set aside.

The taste of moon cakes can be chosen according to preference. I prefer to use red bean paste. In addition, the five kernels contain a lot of nuts, which makes them very good.

Use a food processor to break the mooncakes.

Just beat the eggs, mooncakes are usually very oily and sweet, so there is no need to add any sugar or butter here.

Pour in the yogurt and stir evenly. The yogurt is a natural fluffing agent, which can keep the cake tissue soft.

Add the mooncakes and stir with a spatula to mix well.

Sift in low-gluten flour and baking powder, and continue to stir evenly with a spatula.

Pour in more than half of the soaked raisins, goji berries, and dried strawberries, and stir together to form a uniform batter, taking care not to draw circles.

Introduce the mold and sprinkle the remaining fruit particles on the surface.

Preheat the oven at 160°C and bake for 35 minutes.
11.
Remove the mold while it is hot.
