Pea Yogurt Mousse Cake

Filter the homemade plain yogurt first, pour all into a cloth bag, and put it in the refrigerator to filter overnight;

Prepare all the ingredients. The filtered yogurt is about 500g; the mousse box is supported on the bottom with tin foil, the size is 14*14; 3 pieces of gelatine are soaked in ice water, or soaked in cold water and placed in the refrigerator;

Put 80g of digestive biscuits into a fresh-keeping bag, mash it with a rolling pin, melt the butter in the microwave oven, pour it into the crumbs of the biscuits, gently and evenly across the bag;

Pour the mixed biscuit crumbs into the mousse box, flatten and compact with a spoon, and refrigerate for about 20 minutes;

Take 300g of filtered yogurt, put it in a mixing cup together with peas, and use a hand-held mixing rod to beat until fine;

Soak the soft gelatine, squeeze the water, put it in the microwave oven together with the sugar, and heat until it melts;

Pour the melted gelatin and sugar into the yogurt and continue to beat it evenly with a stirring rod;

The yogurt solution is filtered, and the filtered residue is removed;

Take out the mousse box from the refrigerator, pour the filtered yogurt solution, and put it in the refrigerator for about 2 hours;

Soak a slice of gelatin in cold water, take 150g of yogurt and 20g of condensed milk in a mixing cup;

Melt the soaked gelatin in the microwave, pour it into the yogurt, and beat it evenly with a stirring rod;

Take out the solidified pea yogurt mousse, pour the yogurt solution, and continue to put it back in the refrigerator for refrigeration;

After about 2 hours, the mousse has been shaped. Use a hair dryer to heat the mousse frame around it, and it can be demolded smoothly;

2 slices of Guyou digestive biscuits 30g, use a rolling pin to roll into finely crushed biscuit crumbs;

Use a sieve to sieve the biscuit crumbs on the surface of the cake, and then use a little powdered sugar to decorate the pattern;

This cake is divided into 2 layers, one layer of pea yogurt, one layer of yogurt, and the taste is refreshing.
