Pickled Toon

Remove the stalks of the fresh toon, remove the bad leaves, and wash them with water.

Put water in a pot to boil, add fresh toon and blanch for 1 minute, then remove immediately. After blanching, the fresh toon has no bitterness and astringency, and the taste of toon will be stronger.

Rinse the blanched toon with cold water, and then drain the water.

Put the drained toon in an oil-free and water-free stainless steel basin, sprinkle with salt, stir evenly, and marinate for 24 hours.

Put the marinated toon in a clean container and put it in the refrigerator. It can be used to make chaos, noodles, etc.
