Plum Jelly Making

Wash the jam jar, put it into the pot, add water to touch the bottle, boil for 10 minutes, turn off the heat, put the lid of the bottle into the pot, and continue to sterilize for 10 minutes;

Take out the drained water and invert the jam jar;

Wash the lemon, squeeze the juice after cutting, take 50g, set aside;

Wash the plums and remove the pits, cut into small cubes, put them in a glass bowl, add sugar and lemon juice, wrap them in plastic wrap, and leave them in the refrigerator to pickle overnight to melt the sugar;

Take out the pickled plums and pour them into the pot, add cold water, move the pot to the stove, boil over high heat, and continue to boil over medium to low heat;

Remove the floating objects and bubbles on the surface, stir it from time to time when cooking, so as not to stick to the bottom of the pot;

Soak the filter in boiling water for disinfection. After 10 minutes, pour out the water and drain the filter for later use;

For about 30 minutes, when the amount of water in the pot is gradually reduced by about half, the sauce is concentrated, and the pulp becomes transparent and soft. Continue cooking until the puree begins to have a thick feeling, and the sauce is almost dried up and the jam is solidified. The final temperature of 103℃; After filtering, the pulp is separated from the juice, and the part of the juice drained out is the jelly;

Put the jelly into the bottle, close the bottle cap tightly and buckle while it is hot. After buckling for 30 minutes, wash the bottle body, keep it at room temperature for 3-7 days and then put it in the refrigerator;

The jelly is spread on the toast, it tastes sweet and smooth.
Tips:
1. If the plums are not pitted, you can just cut the plums in half;
2. The remaining pulp after sieving is candied fruit, which can be made into fruit cake or stuffing;
3. Jelly is suitable for adding toast bread, cheese cake, or paired with light-flavored mousse cake;
4. Add a spoonful of jelly to taste when drinking fruit tea. You can also use the jelly on lettuce salad, or eat it with noodles. Add ice cubes to make a smoothie, which is a delicious summer ice product;
