Quick Dish: Shredded Pork with Bitter Melon

Prepare the ingredients, southern bitter gourd, cut into half-round slices, thinly slice the meat, mince the onion, ginger and garlic, and cut the black fungus with a knife.

Add light soy sauce, salt, rice wine, and ginger to the shredded pork and marinate it. It takes about 30 minutes. Then add a little starch and a little bit of blending oil.

Put oil in the wok, add the minced green onion, ginger and garlic, stir fry for a fragrance, then add the shredded pork and stir fry. The shredded pork will not stick to the pan because of the oil.

Stir-fry the shredded pork until it turns white, add black fungus and bitter gourd slices and continue to stir-fry until the bitter gourd changes color, then add the lid and simmer for two minutes without adding water.

Tips:
The bitter gourd in the south has relatively high water content and is not so full of bitterness. Therefore, there is no need to overwater and remove the bitterness. This slight bitterness is more conducive to removing the fire. When frying, there is no need to add water, the dishes are dry and delicious.
