Red Bean Bread
1.
Mix all the flour materials in the dough, dig a hole in the flour pile, pour all the liquid ingredients, and put the butter on first.
2.
Stir it with a spatula into a flocculent shape.
3.
Combine the noodles with your hands.
4.
Knead the dough by hand on a non-stick silicone pad to match the movement of beating.
5.
Take a small piece of dough and inspect it, and a rougher film has appeared.
6.
Add the softened butter.
7.
Continue to knead the dough until a large, hard-to-break film appears.
8.
Reunite the dough and cover with plastic wrap.
9.
The base fermented to double the original volume.
10.
During the fermentation, prepare the bean paste filling. Spread a piece of plastic wrap on the kitchen scale, weigh 30g of red bean paste, 8 servings in total.
11.
Use plastic wrap to help knead the bean paste into a ball for later use.
12.
After the basic fermentation is over, take out the dough, vent and weigh it, evenly divide it into eight equal parts, round it, and relax for 10 minutes.
13.
Take a dough, flatten the dough, and roll it into a round shape.
14.
After turning over, take a bean paste filling ball and place it in the middle of the dough.
15.
Wrap the bean paste filling, squeeze it tightly and close the mouth.
16.
Place it on a baking tray lined with greased paper, cover with plastic wrap, and let it rest for 15 minutes.
17.
Take a dough, flatten it, and use scissors to symmetrically cut out 8 openings about 1 cm in length.
18.
Cover with plastic wrap and carry out secondary fermentation.
19.
The second fermentation is 1.5 times the original volume.
20.
After brushing the egg liquid on the surface, use a rolling pin to dip one end of the egg liquid and then white sesame seeds, and gently press on the top of the bread.
21.
After the oven is preheated, heat it up to 190°C and down to 160°C, and bake for 15 minutes.
22.
After being out of the oven, let it cool and keep it sealed in a fresh-keeping bag.
Tips:
The bean paste is easy to disperse, and it is easily wrapped into the dough with the help of plastic wrap to form a spherical shape.
