Red Bean Paste Double Skin Milk

The milk at room temperature is heated in a milk pan with a low heat, and the heat is turned off when it is about to boil. Pour the milk into 2 bowls and let stand until the milk skin forms on the surface of the milk.

Gently pick a corner of the milk skin with a bamboo stick, pour out the milk slowly, leaving a layer of milk skin in the center of the bowl.

Remove the yolk of the eggs, and then mix the egg whites with sugar and milk.

Strain the surface foam with gauze, and pour it back into the bowl with milk skin.

Wrap the mouth of the bowl with plastic wrap, steam it in a steamer over water for about 10 minutes, let it cool in the refrigerator for a while, add red bean paste to eat.

Tips:
1. The traditional method is to use southern buffalo milk, and home-made whole milk can be used.
2. If you like a sweeter taste, you can replace the red bean paste with honey red beans.
