Red Head Fish Stewed Tofu

1. One red head fish (350g) to remove the internal organs and clean the fish gills

2. Chopped green onion, garlic slices, ginger slices, coriander slices, and one star anise for use

3. Frozen tofu diced

4. Add oil to the hot pan and fry the fish. Pay attention to safety and be careful of burns in this step. Scallions, ginger, garlic and star anise until fragrant

5. Add boiling water to skim the froth, cook with cooking wine and white vinegar

6. Add frozen tofu, salt and white pepper, and simmer slowly

7. Stew until the soup is milky white

8. Turn off the heat and add a little chicken essence to season and sprinkle with coriander.
