Rice Cooker Cake

To make egg yolk paste 1. First, separate the egg yolk and the egg white into different containers (the container for the egg white should be free of oil, water, and egg yolk). 2. Mash the egg yolk, add 15g sugar and mix well until the sugar melts. 3. Add 45g of peanut oil and mix well. 4. Add 45g of milk and mix well. 5. Sift the mixture of rich flour (high-gluten flour) and sweet potato starch, and mix well. 6. After mixing the egg yolk paste, set aside and wait for a while to mix with the beaten egg whites.

Whip the egg whites 1. The container for the egg whites must be oil-free, water-free, and egg-yolk-free. The head of the whisk must also be dry, water-free and oil-free. Beat the egg whites at a low speed until a fish-eye bubble is formed. Add 15g sugar, and continue to beat. 2. Add 15g of sugar when it is like soap bubbles, and continue to beat at low speed. 3. Add sugar for the third time when the lines appear, and add 2-3 drops of white vinegar, continue to beat, and send at high speed. 4. When it is in a dry foaming state, the right angle pulled up is not bent and it is ready.

Mix the egg whites and egg yolks 1. Mix the beaten egg whites into the egg yolk paste 3 times, mixing left and right back and forth without turning. 2. When all the egg whites and egg yolk paste are mixed well, you can feel that it is quite fluffy.

Entering the pot 1. Plug the rice cooker into the power source, press the cooking button to preheat for 3-5 minutes, and then take out the inner pot. Pour the batter prepared in the previous step into the inner pot, tap a few times on the countertop, and let the air out. 2. Put the inner pot into the rice cooker, close the lid, and press the cooking button. 3. My rice cooker automatically jumped to the warm state after more than 10 minutes, and then covered the exhaust valve with a wet towel and simmered for 20 minutes. After 20 minutes, take off the towel, press the cooking button again, skip to heat preservation, cover with a wet towel, and simmer for another 15 minutes, then it's almost done.
Tips:
Insert a toothpick into the center of the baked cake, pull it up to see if there is no sticky matter, it is baked, otherwise, cover and simmer for 10 minutes.
