Roasted Emei Beans with Garlic

Pinch off both ends of the Emei beans and remove the old tendons, wash and drain.

Pat the garlic cloves with a knife, peel them and wash them.

Pour oil in a dry pan, add Emei beans and garlic cloves and stir fry for 2 minutes.

Add salt, chili shells, a few drops of dark soy sauce and a small bowl of water and stir-fry. Cover the pot and simmer for 3 minutes. Stir-fry once or twice in the meantime.
5.
Uncover the lid and stir-fry until the water is dry, fry the Emei Beans, add light soy sauce and stir-fry until they are out of the pot.
