Sand Worm Dry Salted Egg Loofah Soup
1.
Ingredients: loofah, dried sand insects, salted eggs.
2.
Peel the loofah and cut into pieces, soak the dried sand worms until the sand inside is softly cleaned, and the egg yolk and protein are separated by salted eggs.
3.
Pour an appropriate amount of water into the pot and bring it to a boil, add the sandworms and bring it to a boil.
4.
Cook until the sandworms are soft, and you need to break the yolk when you put it in.
5.
Boil until the egg yolk changes color and add the loofah.
6.
The loofah does not need to be boiled for too long, just bring it to a boil and pour the egg whites.
7.
Mix in Himalayan salt and pepper, a little sesame oil, and chopped green onion to turn off the heat.
Tips:
1. Soak the dried sand worms in advance until they are soft, and at the same time be sure to clean the sand inside.
2. The salted egg yolk is more difficult to cook, so put it first, then the egg white.
3. Salted eggs have a certain amount of salt, so less salt can be added to this soup.
