Banji (ban ji) is the Cantonese transliteration of pancake, also known as pancake and hot fragrant pancake. It is a thin flat cake made by cooking batter on a baking tray or pan.
At first, it was just a pie. Later, when I arrived in Hong Kong, the pie was wrapped with fragrant ice cream and fresh fruits. The perfect combination brought more surprises. The sweetness that melted instantly in the mouth, matched with the freshest fruits. You feel too tired, and after one bite, you want to have another bite~"

4. Melt the butter and cool it slightly, then pour it into the egg mixture and beat evenly. The above steps are to use a manual whisk to beat the egg liquid, no need to beat.

7. Sieve the stirred egg batter twice with a drying net.

8. The batter after sieving has no bubbles, and the custard will be more delicate.

9. Prepare a non-stick pan and heat it on a low fire. The pan is slightly hot. Pick it up a little further away from the fire, and pour a spoonful of batter from the edge. Make a quick turn to spread the batter evenly across the bottom of the pan. (My pan is 24 cm in diameter, and this recipe is fried with 15 cake crusts with a diameter of 18 cm)

10. After spreading the batter evenly, put the pan on the pan and continue to fry on a low fire until there are some bubbles on the surface, and the dough is ready to fry. Fry one side and you don’t need to turn it over (the whole process of frying is low fire, generally more than ten Seconds is fine). After frying, turn off the heat, and turn on the low heat when you are ready to fry the next crust (the batter will settle, and you must stir a little each time you fill the batter). If you are proficient at a faster speed, you can keep it on. Fire, but be careful not to make the pot too hot.

11. After each cake crust is fried, it must be placed on the baking greased paper. You can stack up one piece of greased paper and one piece of greased paper.

12. After the crust is fried, you can prepare the fruit. I like to use a whole strawberry and cut the mango into chunks about the size of a strawberry.

13. Then you can whip the cream. 500 grams of whipped cream, add 50 grams of white sugar, beat with an electric whisk, and beat hard. Be careful not to overdo it. The whipped cream is smooth and delicate and can be decorated. If the weather is hot, you can operate it in an air-conditioned room, or place a large basin with ice cubes under it to keep the cream low and easy to dispose of.

14. The next step is to make pancakes, take a crust. The smooth side is facing down, the rough side is facing up, pour a spoonful of cream (larger than fruit) in the middle, and fruit in the middle of the cream (I like to put a whole strawberry or a large piece of mango).

21. If you need to pack it and give it to someone, you can put the fresh-keeping film on the outer bread, and then pack it into the box. In this way, the pancake will not be deformed and will not break.

Tips:

1. I used a non-stick pan with a diameter of 24 cm. Using the amount of the recipe, I made 15 crusts with a diameter of 18 cm. Because everyone uses different methods, the thickness of the crust is different, and the quantity will be different. The pie has a thin crust and tastes better. If you want a thin crust, you need to practice more.
2. It is best not to omit the step of sieving the batter in step 7, because the crust is more delicate after sieving.
3. The frying process is a small fire throughout the whole process. If you are not proficient at first, you can turn off the fire every time you fry one sheet, and turn on the fire when the next one is fried. At the same time, be careful not to make the pan too hot, so as not to burn the crust.
4. The batter will settle, so every time you fry a piece of cake, stir a little when you fill the batter.
5. The cream should be beaten to a hard, smooth and delicate state. Be careful not to beat the head too much. The cream that is beaten is like tofu residue and cannot be used.
6. Pancake is recommended to be eaten after refrigerating, as it tastes better.
