Shiitake Mushroom Soup

Soak the shiitake mushrooms in advance, and add a little starch to the water for easy cleaning

Wash the tailbone

Blanch the bones, add cooking wine, green onions, ginger, blanch the water and remove

Wash and slice shiitake mushrooms

Add the blanched bones to the casserole, add ginger, enough water, add a little red wine vinegar

Add shiitake mushrooms after boiling over high heat and stew together

Turn to low heat and simmer for about 2 hours

Add salt to taste
Tips:
You can add some white vinegar when boiling the bone soup, I add some red wine vinegar.
If you don't blanch the water, use the soaking method to remove the blood water, and use a spoon to skim the foam when boiling.
Add the salt later, don't add it too early.
