I didn’t know that sweet potato stalks were edible before, I only knew that sweet potato stalks were delicious, so I never paid attention to the sweet potato stalks. Every time the leaves were removed, the sweet potato stalks were thrown into the trash can. Later, I heard people say that sweet potato stalks are delicious, crispy and tender. I didn’t care about it. I only know how to eat sweet potato leaves. I like to eat steamed sweet potato leaves. Add some garlic sesame oil to mix it. It's not so delicious.
In other words, food requires constant experimentation and innovation, so today I tried to cool a plate of sweet potato sticks. I didn’t expect it to be so delicious. I fell in love with it all at once. I can’t help but sigh, how many good things I have thrown away for so many years. What a pity!

Simmered Sweet Potato Stalks

1. Tear off the outer skin of the sweet potato stalks and wash them (please ignore the sweet potato leaves in the picture. The peeling step is very time-consuming. Be patient. After the peeling, the sweet potato stalks will not be crispy at all. Don't worry about stuffing your teeth. )

2. Cut into small pieces

3. Boil water in the pot, add a few drops of vegetable oil, and blanch the sweet potato stalks for 30 seconds (the oil can keep the sweet potato stalks green)

4. Fish out enough to be too cold

5. Sweet potato stalks control water and put salt

6. Put a little sugar (the sugar is to neutralize the sourness of the vinegar)

7. Add an appropriate amount of chicken essence in white vinegar, mix well, and put it on the plate

8. Pat the garlic, mince, and place it on top of the sweet potato stalks

9. Put the oil in the wok, add the pepper and chili segments to heat

10. Pour on the garlic and mix well when eating

Tips:

This step of peeling the sweet potato stalks is very time-consuming. Be patient. After peeling, the sweet potato stalks will not be crispy at all, so there is absolutely no need to worry about stuffing your teeth.
