Spicy Lamb Spine Hot Pot
1.

Add the seasonings used to the soup pot and bring to a boil over high heat.
5.
Lower the spine of the blanched lamb.
6.
After boiling, remove the floating powder, turn to medium-low heat, cover and simmer for about 1 hour.
7.
In another pot, pour the oil, add Pixian hot sauce and chili, and stir-fry until the red oil comes out.

Add chopped green onion and ginger and fry until fragrant.

Add lamb bones and salt and simmer for about 30 minutes to further taste the meat bones.
11.
Wash and cut pleurotus eryngii into slices.

Wash the lettuce and tear it into chunks.
20.
Prepare the lamb slices.
21.
Pour the cooked spicy lamb bones into the hot pot, cook the rich side dishes, and you can enjoy the deliciousness.
Tips:
Lamb bones can also be boiled without blanching. I am particularly afraid of the mutton smell of lamb and blanch the lamb spine first. The soup flavor of the spine hot pot is delicious and does not require any small ingredients.
