Spicy Marinated Duck Wings (seaweed Marinated Eggs)

Thaw the duck wings in advance, soak them in water for 2 hours, and wash them well.

20 grams of salt, broken bay leaves and star anise, a pinch of Chinese pepper, stir-fry on low heat, don't need to fry for a long time, just fry it a bit hot.

Take a fresh-keeping bag, pour the duck wings and seasonings, and knead a few times to make each duck wing stick to the salt as much as possible. Then refrigerate overnight.

The next day, boil three eggs in a pot under cold water, boil for 5 minutes after the water is boiled, turn off the heat for 5 minutes, and then remove and rinse and peel them. Cook as many as you want. Add a few eggs and soy products when braising the meat. It's delicious.

Soak the kelp in advance and wash it clean. If you want to tie the knot, if it is not easy to tie, you can just tear it off. You can also buy ready-made kelp knots.

Put the duck wings and kelp eggs in the rice cooker.

Add 15 grams of salt, 2 tablespoons of light soy sauce, 1 tablespoon of half dark soy sauce, 1 tablespoon of cooking wine, 1 tablespoon of scallion oil. There is no or no scallion oil, but it is more fragrant.

Add rock sugar, dried chili and red chili. The chili should be cut into sections so that the spiciness can be easily cooked.

Add the right amount of water, and be sure to completely submerge the ingredients. Normal rice cooking process, my home appliance rice cooker is 45 minutes. For too long, the duck wings are too badly cooked and not chewy.

After cooking, you can change to a clean, non-water container and soak overnight.

On the second day, take out the ingredients and pack them in a fresh-keeping box. The brine can be filtered and saved as old brine next time.
Tips:
1. Add a few eggs to the stewed meat, as well as soy products, kelp, lotus root, etc. It is delicious. Add it as you like, but it must be boil-resistant and not easy to boil.
2. The taste is spicy. The 6 peppers are a bit spicy. If you can't eat it, you can leave it alone. If you like it, you can add a few more.
3. Fry the seasoning to make it easier to pickle when it is hot.
