The most common stall in the farmers’ market is selling spicy tofu in chicken soup. A large bucket of fried tofu is soaked in chicken soup (personally thinks it may not be chicken soup), and the price is not cheap; I made it with bone stewed old soup once. Very good, the tofu absorbs the umami of the bone soup, and it becomes the spicy tofu in the bone soup.

Spicy Tofu in Bone Soup

1. Rinse the old tofu together and cut into large slices;

2. Beat an egg, add tofu on 2 sides and cover it with egg liquid;

3. Put a little oil in a pan, fry the tofu until golden on both sides;

4. Fried tofu;

5. Separate the wok, put the bone soup, add dried red pepper and ginger;

6. After boiling, put in the fried tofu, bring to a boil on high heat, turn to low heat and simmer slowly, simmer until the soup is reduced and thickened, and the tofu also begins to become larger. Taste the salty, old soup tastes heavier, generally do not put Just fill out the salt.

Tips:

The fried tofu is not easy to disperse when stewed. There is no old soup that can be seasoned with oyster sauce, soy sauce, sugar, and spices. The taste is the same.
