Stacked Quilt-coconut Toast
1.
Raw material for making coconut paste.
2.
All raw materials except coconut and bread flour are mixed.
3.
Add coconut and bread flour and mix well.
4.
Put it into the microwave oven, high heat for 1 minute for the first time, take it out and stir, then heat it for half a minute each time, and take it out and stir until the coconut is in this state.
5.
Divide the chilled coconut into 2 portions and put them in a fresh-keeping bag, shape them into squares, and put them in the freezer to freeze hard.
6.
Mix all the ingredients of the dough and knead out the film with the cook machine.
7.
Basic fermentation in warm and humid places.
8.
Exhaust, divide 230 grams into 1 piece, and divide the rest into 2 pieces, respectively, round and relax for 15 minutes.
9.
Begin to fold the quilt, roll the dough into a rectangle, and put the frozen coconut filling on 2/3 of the place without defrosting.
10.
The first three fold.
11.
Relax, roll it out again and fold it for the second time.
12.
Relax again and fold it out for the third time after rolling it out.
13.
After three folds, the dough is formed into a dough about the same length as the toast box.
14.
Cut 2 knives, do not cut off the top.
15.
Braid into a braid, put it in a toast box, and there is a large dough like this dough. After three times of three-folding, without braiding, put it into the toast box directly with a single peak shape, and roll the other small dough directly with beef tongue. Put it in a small toast box.
16.
Ferment for the second time in a warm place, put some water in the oven.
17.
Preheat the oven at 120 degrees and bake for 40 minutes.
18.
Sit in rows of toast!
19.
Braided bread close-up.
20.
A close-up of a single peak with a headshot on one side.
21.
Sliced, depressed... the coconut paste and the dough are similar in color, so you can't see the layers. Next time, use a filling with a bigger color difference.
Tips:
1. The bread flour needs to be sifted before use.
2. The temperature of the oven can be adjusted by itself.
3. Cover the surface with tin foil or turn off the heating tube after the surface is colored, so as to avoid the surface color is too dark, I am late this time, a little blackhead.
4. Folding the quilt must be fully relaxed, otherwise it is not easy to roll.
5.2 Shapes I want to see the effect of different shapes on the height and organization of the toast. It turns out that there is no difference.
