Stir-fried Flower Crab Soy Sauce and Oyster Sauce Love Each Other

After killing the crab, use a brush to clean the surface of the crab shell. Marinate sliced ginger and two caps of cooking wine for 10-15 minutes. Use this marinating time to prepare the side dishes.

Clean the garnish, cut the green onion into sections, slice the ginger, and smash the garlic.

Cut green onion and coriander into sections.

Add an appropriate amount of peanut oil to a low heat. When the oil temperature is 80%, add chives, ginger, garlic and sauté. Personal habit is to turn off the fire to a minimum and slowly saute the onion, ginger, and garlic. Don’t worry about burning, but let the oil slowly soak the flavor of onion, ginger and garlic. Tasty aroma.

After the low heat turns to high heat, add the crabs and stir fry them slightly to see that the crabs start to change color a little bit. (Not acting in a TV series, you don’t need to be in a flashy posture and keep making stirs ☺)

When the crabs are almost completely discolored, add a spatula of light soy sauce, add the amount of oyster sauce as shown in the figure, and stir quickly and mix well.

Appeal step: Stir the light soy sauce and oyster sauce and add 1~2 spatula water immediately after stirring. Cover and simmer for 1 minute. When simmering, the fire turns to medium and small fires. (The braising is to ensure that the seafood is fully cooked in a short time, so you can eat it with confidence. Simply stir-frying will cook slowly, and the meat will get old after a long time. My family does not eat raw meat.)

After simmering for 1 minute, open the lid, add scallions and coriander, stir-fry and mix well, then turn off the heat and take it out of the pot. (Because less water is added when simmering, only a spatula is used, and the juice is almost collected after simmering for about 1 minute, everything is just right~)
Tips:
If you like spicy food, add chili when you saute the onions, ginger, and garlic at the beginning. It is absolutely guaranteed that every bite of oil is spicy.
